Mango and strawberries are definitely my favorite fruits. So here I have composed a cake that unites my favorites and that in addition to the food reflects my fusion in Masalamagic. What do you think of this?
Cake with mango mousse
250 gr bixit biscuits
90 g melted butter
2 teaspoons of agar agar or 4 plates of gelatin
400 g mango puree
3 tablespoons powdered sugar
3 dl heavy cream
2 egg whites
pistachios as desired
I have chosen to make it without gelatin but with agar agar which is plant gelatin from algae. It works great! If you prefer gelatin, you can use it the usual way (follow the instructions on the package).
Procedure:
- Crush the biscuits and mix with oil, spread the mixture in the bottom of the cake tin and refrigerate for a couple of hours. Whisk the cream and egg whites separately.
- Quickly heat the agar agar with a little mango puree, cool slightly and mix with the rest of the mango, whipped cream and beaten egg white.
- Pour the mixture over the biscuit base and refrigerate for at least 4-5 hours. Serve with sliced strawberries and a sprinkle of pistachios.
Tastes amazing with traditional black coffee.
