Here I have brought up an old memory from the school kitchen days, I was lucky enough to have a school kitchen teacher who taught us traditional dishes that at least my children have not seen in their school days. It resulted in another addition to my mango mania. You can probably guess which dessert is the inspiration?
You can crush the breadcrumbs which is a quick option, I toasted medium-coarse slices in the toaster. Tried to make a healthier version, but here I have to agree with the test rabbits. It turns out best on breadcrumbs, no. 2 loaf, it turned out a bit too "bread" taste with coarse slices. For a gluten-free option, just use gluten-free loaf or dry them to get breadcrumbs.
Magic mango girls ( 2 servings)
2 slices of bread
2 teaspoons ghee or butter
2 teaspoons brown sugar
1 teaspoon ground cinnamon
whipped cream
mango puree
a little grated dark chocolate
Procedure:
Heat butter or ghee, crumble breadcrumbs, fry for a few minutes with brown sugar and cinnamon to make it a little crispy.
While it cools, whip the cream with a little sugar and vanilla extract. Add layers of breadcrumbs, whipped cream, mango puree. Finish with cream and a little grated chocolate.
