I always thought eggless cakes were a challenge, but these totally take the cake! Ever since I was 12 years old, I've had a recipe collecting craze. Over 90% have never been used! 10 years ago I gave a vegetarian course for an organization, this recipe was probably from there? Then I changed it a bit because it had such strange measurements, and you know what? These turned out insanely good! I promise that I'll only make eggless shortbread cookies at my place anyway!
Tell me, can't you make these outside of Christmas? I've made them for my guests from India. Is that allowed? They loved it anyway.
CRUMB COOKIES WITH MANGO CREAM (30 pcs)
3 dl heavy cream
75 g icing sugar
150 g wheat flour
100 g potato flour
2 dl whole milk
1 tsp ground cardamom
MANGO CREAM:
1.5 dl heavy cream
1 tablespoon sugar
1.5 dl mango puree
ROASTED ALMONDS:
200 g almonds
80 g brown sugar
1 dl water
2-3 teaspoons ground cinnamon
1 tbsp butter

Procedure:
- Beat the icing sugar and whipping cream, then carefully add the rest until smooth.
- Let the batter sit for at least an hour, I left it in the refrigerator overnight.
- Mango cream is made by mixing cream and mango puree.
- Bake the cookies and cool. Fill with mango cream and garnish with toasted almonds!
