This is fusion at its best! Here's something that I've been sooo happy with and just in time for Diwali on Sunday. Listen to this, wheat-free (yes, I've learned that it's better than writing gluten-free!), egg-free and dairy-free. Admittedly, I've had ground almonds, but they can be dropped in favor of more coconut pulp. AND, after tasting these, I got several new ideas (coming soon to the blog).
I love chocolate (a little too much actually), coconut as well. The combination became coconut and chocolate laddo. Laddo means a roundness or bowl in a double sense, that is, it can also mean a thickening. You can make these in zero, comma niks. The only downside is that they disappear very quickly. Masala chai or regular black coffee are the best with these.
COCONUT AND CHOCOLATE LADDO
100 gr coconut pulp
100 g melted chocolate
30 g almonds
2-3 tablespoons coconut milk
4 tablespoons coconut paste for garnish
Procedure:
- Melt chocolate and grind almonds with the skin on.
- Mix everything in a bowl, roll into small items.
- Dip in coconut paste and leave for half an hour, if you can.
