Good morning! Hope you had a great weekend :) I'm going to tempt you with dessert today. The main ingredient is super popular these days!
Barfi means candy pieces, they are cut into the shape of syrup nibbles. Have you tried barfi made from chickpea flour ? This is even easier, and also egg and gluten free. Made faster than waffles... And you can add a little melted dark or light chocolate so you don't have to buy Bounty :) I have halved the sugar from the way my mom makes it, as it satisfies my sweet tooth, but if you want more, just double it. Definitely a must try!Coconut Barfi
200 gr coconut pulp
100 g sugar
1 dl milk/water
½ teaspoon ghee
Procedure:
- Grind the coconut pulp finely in a food processor. Mix in sugar and milk/water and let stand for 30 minutes.
- Heat ghee in a frying pan and add the mixture, stirring regularly for 3-4 minutes.
- Grease a dish with a little fat, pour the mixture over it and smooth it with a knife. Let it stand for 1 hour. Cut into neat pieces and decorate with silver leaf. Some of this I shaped as balls without chocolate. Some balls I dipped in melted dark chocolate and rolled in coconut.
