Fantastic fruit cake

The first thing you associate with cake is the traditional shape, made with eggs, sugar, flour, etc. Here I have made an untraditional cake that can be eaten with a clear conscience. Admittedly, it doesn't hold together as well as a regular cake, but that's no obstacle to enjoying the flavors. It's not too bad that it's super quick to make, is it?

To make it gluten- and lactose-free, you can use, for example, gluten-free biscuits and soy cream. I have used my favorite, Bixit biscuits and lactose-free cream. NOTE! It disappears in 1-2-3 :)

FRUIT CAKE

1 pk Bixit biscuits

½ cup orange juice

1-2 dl mango puree (own advertisement)

3 dl heavy cream

Grapes, strawberries, blueberries, kiwi, apple and banana

Optionally toasted almonds

Procedure:

  • Crush the biscuits, but save two pieces to roughly crush for decoration.
  • Whip cream and cut fruit.
  • Mix juice with the biscuits to get some binding.
  • Press the mixture into the bottom of a cake tin, and cut fresh fruit as desired.
  • Spread the mango puree on the fruit and top with whipped cream.
  • Garnish with almonds, fruit and coarsely crushed biscuits.
