Besan ki barfi

Autumn is a time of many cultural and religious events. The highlight comes on Thursday, Diwali. The festival of lights that celebrates the victory of good over evil. A day spent with close family, lots of good food and gifts. A bit like Christmas Eve. Here in the house, candles are lit in every nook and cranny, it is both beautiful and gives a nice inner peace.

Since it's getting closer, the preparations are coming along. This is a type of sweet that is eaten during these times. Completely gluten-free, as it is made with chickpea flour. Definitely worth trying! :)


This is what you need:

120 grams of sugar

100 grams of ghee

½ tsp cardamom

1 tablespoon pistachio

Crush the sugar and heat the ghee so that it melts.

Then add the flour and stir for about 5 minutes.

Continue stirring, then add sugar.

Add nuts and stir.

Here I recommend having baking paper in the dish or mold you want to use. I don't have it myself, as it can be easy to forget. If you forget it, the cake will "stick" more to the mold/dish and crumble a little. The appearance will also be less pretty.

Sprinkle the remaining nuts and cardamom over for decoration.

Now that it's cooler, it's perfect weather to let this sit outside for about 45 minutes. After that, just cut them into the desired shape and size of the pieces. The picture below shows the most common way to cut.
