Besan ka halwa

Halwa actually means porridge, but we often use it as a dessert. You can use semolina , make it with carrots (recipe coming soon) or use the healthy, protein-rich chickpea flour. It "sets" more the longer it sits, like mashed potatoes. That's why it's best to eat it quickly after preparation. It tastes best lukewarm and preferably with a nice cup of chai . I haven't tried it with coffee , but it probably works well. What do you think?

Besan ka halwa // Chickpea flour halwa

½ cup ghee

1 cup chickpea flour

¾ cup sugar

1 cup milk

1 cup water

½ tsp ground cardamom seeds

(optionally chopped almonds/nuts)

Procedure:

Heat ghee, add chickpea flour and stir regularly over medium heat for a few minutes until you see the flour change color. It must not burn. Add sugar, milk and water. Add cardamom seeds, save a pinch for decoration. Serve in small bowls with nuts and a sprinkle of cardamom, if desired.
